Lemony Shrimp Salad

Ingredients

Shrimp and Marinade

  • 24 large shrimp, pealed and deveined
  • 2 tsp lemon zest
  • 1/2 tsp smoked paprika
  • 1/4 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1 tsp extra virgin olive oil
  • 6 skewers, soaked in water if wooden

Salad and Dressing

  • 6 cups baby arugula
  • 2 tbsp extra virgin olive oil
  • 1/4 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1 avocaodo, peeled and diced
  • 2 tbsp lemon juice
  • 1 tbsp white wine vinegar
  • 1 ounce queso fresco, crumbled

This zesty shrimp salad is light, fresh, and packed with flavor.

Preheat grill or grill pan on high.

Combine 2 tsp lemon zest, 1/2 tsp smoked paprika, 1/4 tsp salt, 1/4 tsp pepper, 1 tsp olive oil, and shrimp in bowl. Toss to combine and allow to marinate for 10 minutes.

Thread 4 shrimp onto each skewer and grill 2 minutes on each side or until done. Can also saute on the stove instead of grilling the skewers.

Combine 2 tbsp extra virgin olive oil, 1/4 tsp salt, 1/4 tsp pepper, 2 tbsp lemon juice, and 1 tbsp white wine vinegar. Toss arugula with dressing and top with shrimp, avocado, and queso fresco.
